Fried Tenggiri  Sauted in Fresh Tomatoes and Fresh Red Chillies 


3 pcs of tenggiri pieces 
2-3 fresh tomatoes - sliced 
1 onions - sliced 
4 -5 red chilies 
Shrimp paste 
Salt to taste
Sugar to taste
Turmeric powder for frying fish 
Tamarind juice to taste (can use Asam Gelugor/Asam Keping)
Oil for frying and saute 

Clean tenggiri and rub some salt and turmeric powder and fry the fish. Once fried put aside 
In a blender - pulse red chilies, sliced onions and tomatoes and shrimp paste 
Heat wok with oil and pour in all blended ingredients 
Saute all ingredients till cooked and put in the ready fried tenggiri 
Add in tamarind juice, salt and sugar to taste
Let all ingredients simmer for 5 minutes or till cook to desired texture and serve.


Grilled Lamb Loin
180 gm lamb loin
20 ml olive oil
0.5 gm dried oregano

0.5 gm dried thyme
0.5 gm dried rosemary
2 gm ground black pepper
Salt to taste


  1. Rub the lamb loin with olive oil in a small bowl, combine the oregano, thyme, black pepper and rosemary
  2. Mix it all over the loin marinate for 10 minute at room temperature
  3. Grill the lamb loin 2 to 3 minute per side
  4. Serve the lamb loin with the mint pesto

Mint Pesto


2 clove garlic
30 gm cashew nut
0.5 gm fresh parsley
0.5 gm fresh basil leave
100 gm fresh mint leaf
20 gm grated parmesan cheese
0.5 gm ground black pepper
40 ml extra virgin olive oil
Salt to taste


  1. Add the garlic to a food processor and pulse until chopped
  2. Add half of the herbs chop for 30 second
  3. Then add the rest of the herbs and chop
  4. Add the parmesan cheese, salt and black pepper pulse briefly until combined
  5. While machine is running slowly add the olive oil in a steady stream and process to desired thickness
